Corn Sandwich Recipe

The spinach corn sandwich is one of my favorite lunch box recipes at our home and is also convenient for me to make in less time.

Ingredients:

  1. 2 tbsp Butter
  2. 1 tbsp Chopped Garlic
  3. 1 Cup Boiled Corn
  4. 2 Cups Chopped Spinach
  5. (1 Cup Milk + 1/2 tsp Corn Starch) Mix well & pour
  6. Salt as per taste
  7. 1 tsp Black pepper
  8. 1 tsp Chilli flakes
  9. 1/2 Cup Mozzarella Cheese
  10. Whole Wheat Bread
  11. 1 tsp pizza oregano

How to make Corn Sandwich

Heat 1 tablespoon butter in a skillet. Once the butter melts, add garlic and corn saute for 1 minute.Add black pepper, salt and mix. Add chopped spinach and cook for 30 seconds till leaves wilt. Then add cornflower (maida) and saute for 1-2 minute till it’s all roasted. Add milk, keep stirring. Add pizza oregano, red chili flakes and cheese. Stir to combine. Let it all cook for 2 minutes or till milk dries up and mixture looks like a paste. Spread the prepared spinach corn mixture on bread slices. Melt the remaining tablespoon of butter on a grill pan. Toast till sandwiches are golden brown from both sides. Cut into slices and serve these spinach corn sandwich with any sauce of choice.
